★ ENGINEERING EXCELLENCE ★
Every bakery uses this same scalloped blade. Also called a boneless meat blade.
The razor-sharp blade on all our knives is the same stainless-steel blade used in bakeries to perfectly slice soft sandwich bread.
It is also used in meat markets on bandsaws to slice boneless meats. This commercial blade is made for thousands of hours of slicing. In your home kitchen, it moves through vegetables, sourdough, tender brisket, and grilled fajitas with nearly no pressure—let the razor-sharp double scallops do the work.
★ OUR HERITAGE · EST. 1992 ★
Handcrafted in Texas by the Quiñones Family
Established in 1992 by J. Rafael Quiñones Sr. and Joe Quiñones Jr. when Dad decided to discover how bakeries perfectly sliced bread so we could slice homemade bread the same way too.
We supported our family of seven kids by going to craft shows, farmers’ markets, and festivals, demonstrating how this amazing blade can slice bread, vegetables, boneless meats, and cheese. Dad’s favorite line was, “No Squishies.”
Then in 2000, two years after Dad passed, Joe designed The Texas Brisket Knife Company brand because one of Dad’s favorite pastimes was smoking brisket. Later, Joe designed the all-new Bow Slicer—inspired by sourdough bakers and made to show off a perfectly baked sourdough boule.
